Authentic Bavarian Obatzda

Obatzda (also spelled Obazda or Obatzter) is a classic Bavarian cheese spread traditionally served in beer gardens with pretzels and a cold beer. It’s rich, creamy, slightly tangy, and packed with flavor — perfect as a dip or spread.

Ingredients
250 g ripe Camembert cheese
½ onion
200 g cream cheese
2 tbsp soft butter
1 red onion
1 tsp paprika powder
½ tsp caraway powder (alternative cumin)
Salt and pepper
A dash of beer (optional)
garnish (optional): onion rings, chives, paprika powder
Preparation
Prepare the cheese: Bring the Camembert to room temperature so it softens.
Mix the base: In a bowl, combine the Camembert, cream cheese, butter, and finely chopped onion. Use a fork or mixer to blend until smooth.
Season: Add paprika, caraway, salt, and pepper. Mix well.
Optional beer splash: For a softer, more traditional texture, add a small dash of (alcohol-free) beer and mix to combine.
Serve: Transfer to a serving bowl, garnish with onion rings and chives if desired, and enjoy with freshly baked Bavarian pretzels - I recommend Oktoberfest-size
Tips & Variations
Beer choice: A wheat beer or lager (why not alcohol-free?!) adds subtle flavor and thins the spread nicely.
Consistency: For a thicker spread, skip the beer. For a softer dip, add a splash more (alcohol-free) beer or water.
Serving: Try with radishes and Oktoberfest-sized pretzels for the real Bavarian experience. :)
